Blue Apron Favorites April 2020

Hey ya’ll! It’s time for another round of Blue Apron favs. This post is a little belated, mostly due to the fact that we decided to take a little break from Blue Apron at the end of April to try and eat a little more on the low carb side of things. Also, we were full force into COVID shelter in place, so the meal availability was pretty much cut in half, making our beloved meal kit service not really an inspiring option for us.

While pickings were a little slim for April, we still had a handful of really good meals for me to choose for my favorites lineup!

Salsa Verde Shrimp & Gnocchi

Normally when I think of salsa verde, it’s going on top of some tacos or Mexican food. This was an Italian style salsa verde with green herbs and kale! The dish was not overly saucy, and the crunch from the toasted almond and panko breadcrumb topping was a nice textural contrast to the softer shrimp and gnocchi.


Savory Beef Rice Bowls

I’m going to go out on a limb and say that the rice bowl dishes are some of my favorites to make from Blue Apron. Everything is always packed with so much flavor! And, if you’ve read my previous Blue Apron posts, you know that one of my favorite things to eat is rice. The flavors in this dish are robust, with some of my all-time fav Asian elements being incorporated, such as fresh ginger and Korean Gochujang (I never spell that right on my first try). The fresh vegetable elements in this dish include baby bok choy and sliced radishes, which provide a great crunchy texture.

Our Variations

We subbed sour cream in place of the mayo for the creamy Gochujang sauce.


Ginger Pork Meatballs

Well hello there to another delicious Asian-inspired dish! Again, we have powerful flavors in this meal with fresh ginger, soy glaze, rice vinegar and BBQ sauce for the meatballs. I loved this dish so much, I selected it again in another upcoming round of meals! Repeats do not happen often for us, so when I see a favorite pop up, you know I’m going to snag it. These delicious meatballs were served over a bed of steamed brown rice, and topped with some fresh quick-pickled radishes for a nice bite of crunch. Can’t wait to have this again soon!


Romesco Beef & Ditali Pasta

Alright, who doesn’t love a good pasta dish?! Most of my life, I primarily ate vegetarian or seafood pastas, but I couldn’t pass up the chance to try a unique style of pasta with ground beef, poblano peppers, and carrots of all things! My husband is not a huge fan of carrots, but he made it through the meal just fine. The ground beef in this dish is seasoned with a Spanish-style spice, so while you may think Italian, this dish is anything but! Great flavors and nice texture from the peppers and carrots as well. I also really love the ditali pasta noodles – in all of our years of eating Blue Apron meals, this is only the second time we’ve gotten a meal with this pasta.


Pork Burgers & Potato Wedges

Okay people – I saved the best for last. These pork burgers, made with pork chorizo, were some of the best burgers my husband and I have ever tasted – and I do not say that lightly! The flavors from the pork chorizo were intensely savory and satisfying. The ground meat supplier for Blue Apron is really good quality. We even looked them up to see if we could buy meat from them directly! Sadly, they only seem to supply to Blue Apron. I guess that means we’ve got to stay loyal!

Our Variations

Since mayo and my household don’t mesh well, I made a cumin lime sour cream instead (just a few tbps of sour cream, maybe half a lime, and some dashes of cumin, salt, and pepper). We also added jalapenos to the sauteed onions, and a slice of gouda cheese for good measure (the gouda added a nice smoky flavor that paired well with everything else).

And that’ll do it for April Blue Apron Favorites! There won’t be a post for May since we skipped a month, but I’ll be back with my favs for June soon.
