Blue Apron Favorites September 2020

Welcome to another roundup of Blue Apron favorites! My September Blue Apron favorites included quite a mix of different styles in terms of dishes, with pork and chicken coming in at a tie! September was also the last month of summer, which meant dishes with summer veggies like fresh corn started to dwindle. We don’t really eat a lot of corn, but Blue Apron dishes in July, August and September really made us new fans!

Here are my September favs:


Turkey Piccata Meatballs

This turkey piccata meatball dish was nice and light in the flavor department, with bright citrus notes from the lemon and richness from the butter sauce. The fresh veggies featured in this dish included zucchini and cherry tomatoes, and a salty zing from the capers finished it off. Everything was served over a helping of creamy orzo that was mixed with crème fraiche just before serving. Anyone else love the texture of orzo? It’s like pasta rice!


Cajun Pork & Farro Salad

I was never a huge fan of pork chops, but my husband has been slowly turning me into fan by cooking them just right. The cajun pork was served with a warm farro and corn salad, which was cooked up with celery and garlic. Delicious! Lastly, having the sweet pepper yogurt with each bite pulled everything together with the right amount of moisture.


Korean Pork & Rice Cakes

It may not look pretty, but it was pretty tasty! Ground pork dishes (or anything with ground meat for that matter) are always easy for me to cook as they don’t require precise timing like a cut of meat does (I leave those up to the husband to cook!).

And I’ve said it before, and I’ll say it again, I really love when the Asian dishes come with the aromatic packs full of ginger and garlic as they really enhance the flavors of the dishes. And if you’ve never had Korean rice cakes, they are a bit odd and chewy, but we really like them!


Chipotle Chicken Tostadas

These chipotle chicken tostadas were probably my favorite of the favorites for September. This dish was made up of crispy flour tortillas with creamy beans, smoky chicken breast chunks, fresh tomatoes, radishes and green onion, and topped with salty cotija cheese! These were delicious and pretty, visually. Tostadas (and tacos) are an easy meal to prep, and will definitely always make it into our boxes when available.


Hot Honey Crispy Chicken

I don’t eat a lot of fried chicken – it’s just not my thing. However, this is a fried chicken I can get behind! A juicy chicken breast pan fried with a nice crispy crust and a drizzle of honey hot sauce. Perfecto! Along with the chicken, we made a dirty rice with poblano peppers and onion and garlicky green beans. A very easy Southern-inspired dish to make!

Honorable Mention

We also made two repeat dishes that are some of my all-time favorites – Pork Chorizo Meatballs w/ Pepper Rice (which we first made in the month of August 2020), and the Chipotle Chicken & Cilantro Rice, which we first made in November 2019.
