Sprouts Haul February 2024 (Including Super Bowl Snacks!)

Welcome to my Sprouts Haul recap for February 2024! This was a bigger haul than usual since we were hosting a small Super Bowl gathering, which meant extra food. Super Bowl provided us with a lot of leftovers but I also focused on a few different meal ideas to change things up, including two casseroles for dinners/lunch leftovers that we haven’t had for a while!

New Items

Overall, most of what I got are things that we usually throw in the cart from Sprouts, but I did try a couple of new coffee items plus some new flavors of ice cream bars.

Meal Plans

I generally shop at Sprouts once a month, alternating with Trader Joe’s and supplementing items from Thrive Market. I do keep other ingredients on hand to incorporate with these meals and some ingredients are also leftover from my previous hauls.

Here’s what I planned for this haul in terms of meals:

Breakfasty Things

Items for my breakfast lineup were pretty simple this trip. Since I still had eggs and sausage in the fridge/freezer and some protein cereals on the way from Thrive Market, I just grabbed some bagels and cream cheese to hold us over. I really like the Dave’s Killer Bagels for the extra protein content!

New Creamer!

Since my favorite vanilla or hazelnut creamer was out of stock (I swear, this happens ALL THE TIME), I ended up trying the Sprouts brand Organic Sweet Cream Creamer. I don’t recall ever seeing this at my store (unless I’ve just ignored it in favor of the other flavors), but this was the only Sprouts creamer available.

I like it just as well as the other flavors but I also had to grab a half and half as well because it was literally the last creamer on the shelf!

Sumatran Blend Coffee

I’ve been trying to grab some different coffees to see if there’s something I prefer over another. This Sumatran blend is good, but I think I’ll go for a darker roast next time. I’m not a coffee expert though! What kind do you prefer?

Lunch Items

Lunch items were also light this week because I knew we’d have a lot of leftovers from the Super Bowl.

I’m digging the whole roasted chickens from Sprouts lately because I get a lot of meat from them (like at least four meals worth (for one person)). I primarily bought this chicken for Cobb salads, which turned out super delicious. The Butcher Shop bacon from Sprouts is the best!

  • Ingredients Bought: Spring mix, whole roasted chicken, bacon, red onion, and avocado
  • Ingredients on Hand: Balsamic vinegar, mini heirloom tomatoes, and blue cheese

Check out my finished product! I put about 5 oz of chicken in each salad and with all my ingredients combined, I got about 52g of protein for lunch.

Dinners

For dinners, I decided to add a few different things into the rotation (other than my beloved tacos of course!). Keeping food simple is generally our goal, but I do get a little bored from time to time and need to shake things up.

Ground Beef Tacos

If you read through any of my haul posts, you’re going to see taco ingredients in EVERY SINGLE one of them. Sorry, not sorry! Tacos are just the easiest (and tastiest) things for us to whip up during the week for dinners.

  • Ingredients Bought: Flour and corn tortillas (we like options), shredded cheese, grass-fed ground beef, pickled and fresh jalapenos, roma tomatoes, Yellow Bird hot sauce (my new favorite brand), sour cream, salsa, and black beans (optional for extra fiber)

Bonus: The Jeff’s Garden jalapenos were BOGO! So I got four for the price of two. Score! I love when Sprouts has sales.

Chicken Fajita Casserole

My original idea for this chicken fajita casserole was to make something that we could serve over rice, but it sort of morphed into more of an enchilada casserole by the time we actually made it. We ended up adding some corn tortilla layers as a binder to hold things together, but only used eight of them in the whole casserole! It turned out so delicious.

  • Ingredients Bought: Chicken breast, shredded cheese, cream cheese, sour cream, jalapenos (fresh and pickled), bell pepper, yellow onion, and green onion (I should have actually put cilantro in the picture instead of green onion – oops). Not pictured: guacamole and pickled jalapenos.
  • Ingredients on Hand: Green enchilada sauce (Siete brand, which I purchased from Thrive Market)

To make the fajita casserole:

  • Cook whole chicken breasts in a pan with taco-style seasoning of your choice (my husband does his own thing but I personally would just use a taco seasoning packet)
  • Once breasts are cooked, shred and throw back into the pan – add more seasoning and half the jar of green enchilada sauce (maybe a little water to add moisture)
  • Add block of cream cheese to the chicken to make it nice and creamy
  • Slice and cook fajita veggies (onion and bell pepper) in a taco style seasoning
  • Layer the chicken and fajita veggies with cheese and tortillas, adding enchilada sauce to the top of the tortilla layers
  • Top with cheese and sliced jalapenos and cover with foil to bake (about 30 mins)
  • Remove foil and let the cheese bake directly under the heat for about 5 mins or so
  • Serve with guacamole and sour cream (garnish with cilantro or green onion)

The bulk of this casserole was honestly mostly chicken breast, which is such a high source of protein! I estimated about 4oz of chicken for each slice we had. Paired with the tortillas and cheese, I think we got around 47g per slice. Adding cream cheese and sauce to the shredded chicken really helps with moisture. As you probably know, chicken breast can dry out real fast. But with everything we added here, it was perfect.

Cabbage Roll Casserole

We haven’t made this dish in a hot minute! I was obviously on a casserole kick this month, but I knew my husband would be traveling for work and cooking things in a bulk fashion would make it easier for me to eat on my own while he was gone. I’m not the chef in the house and I really don’t like cooking for one!

  • Ingredients Bought: Grass-fed ground beef, shredded cheese, cabbage, yellow onion, bell pepper, canned diced tomatoes, and garlic (not pictured).

This is actually a super easy meal to make using this recipe from Wonky Wonderful. Just brown the beef in seasonings and add garlic, onion, and bell pepper until softened. Add in can of diced tomatoes. Chop cabbage into larger pieces and throw it on top of the beef in your pot. Cover and steam for about 20 minutes. Add cheese, and cover again to melt. Serve with sour cream on top!

You could also serve this over rice if you need to add some carbs to your day.

I would classify this meal as ugly delicious – it’s not the prettiest of things but it tastes good and the recipe makes enough for four meals (for one person).

Ground Turkey Stir Fry

Lastly, I got a few things for ground turkey stir fry. This could be a noodle situation or a stir fry to have over rice. I also threw in a cucumber which I sometimes do a quick pickle of in rice vinegar, salt and pepper. It adds a little refreshing crunch (usually when I do rice bowls though and not noodles).

  • Ingredients Bought: Ground turkey, bell pepper, asparagus, garlic, yellow onion, and cucumber
  • Ingredients on hand: Rice or noodles, rice vinegar, and stir fry sauce ingredients

Super Bowl Snacks

The main focus for this Sprouts haul was Super Bowl snacks! Super Bowl is a favorite “food holiday” of mine. I’m not a big football fan, but I am a big fan of Super Bowl food spreads. Here are the items we made (and this is us taking it easy, believe it or not!):

  • Bean dip
  • Chili & chili dogs
  • Nacho bar
  • Smoked chicken wings

We had quite a bit of leftovers (as expected) so we had plenty of food for lunches and a few dinners that same week, especially since we made a double batch of chili.

Bean Dip

This is my go-to bean dip, which is a little different than your typical seven-layer dip (and I have to admit, I stole this from my friends and I’m not sure where they got it from). My six-layer dip includes:

  1. Refried black beans
  2. Sour cream & cream cheese blended together with taco seasoning
  3. Guacamole
  4. Salsa (just pick your favorite, although I advise against a pico de gallo style)
  5. Shredded sharp white cheddar
  6. Green onions

The cream cheese adds a luxurious element to the dish and the sharp white cheddar packs a punch. I am also a huge fan of using salsa instead of diced tomatoes because it imparts so much more flavor! I do, on occasion, make my own guacamole but I was being lazy this time and bought a pre-made tub.

This is one of my favorite party appetizers. I will never refuse a good bean dip!

Chili & Chili Dogs

My husband has perfected his chili recipe and I am such a huge fan. I request it often! For Super Bowl, it really is a versatile food – have a bowl of chili on its own, use it for chili dogs, or use it as a base for some DIY nachos.

  • Ingredients Bought: Grass-fed ground beef, kidney beans, chili beans, diced tomatoes, tomato sauce, tomato paste, diced green chilies, and yellow onion.
  • Ingredients on Hand: Seasonings (the most important being your chile powder, which I am picky about – I like the Simply Organic or the McCormick Organic brands).

Ingredients below are for a double batch.

If we’re making chili, we might as well have some chili dogs too right?! These grass-fed beef hot dogs from Grass Run Farms are delicious and I highly recommend them.

  • Ingredients Bought: Hot dogs, hot dog buns, shredded cheese & chili ingredients above

The best way to build ’em: steam the buns and dogs, add mustard to the bun (trust me, it’s good!), and top with chili, cheese and onions.

Nacho Bar

Build-your-own nacho bars are a really great party food because people can easily compile something they enjoy with toppings of their choosing. And who doesn’t love nachos?!

  • Ingredients Bought: Chips, shredded cheese, fresh jalapenos, red onion, salsa, guac, sour cream, black olives, and cilantro (plus chili ingredients above)

This was my first time buying the We <3 Guac brand and I thought it was tasty with nice big chunks of avocado, which I actually like! I hate it when guacamole is too blended and becomes more like a cream.

I’m also a fan of the Casa Sanchez salsas and I picked the Organica specifically because I knew the medium-spice level wouldn’t be too over powering.

Smoked Chicken Wings

Smoked chicken wings were my personal request. My husband bought a new Traeger smoker last year and he has been cooking up some delicious things! He makes his own very tasty spice rub and I love that we had a nice healthy protein as part of the spread.

Sweet Treats

Last but not least, we can’t leave out some sweet treats I got to get me through the weeks. I tried two new-to-me flavors of the Enlightened ice cream bars, this time choosing the Greek Yogurt Bars in the Mint & Cookies and Caramel Brownie flavors. Both are delicious!

That’s it for this round of groceries at Sprouts! Next trip, I’m really aiming for a grocery budget around $300.00. Will I do it? Stay tuned!
