Low Carb Breakfast Meal Prep Ideas

In search of good breakfasts on the go? What about low carb breakfasts on the go?! I was looking for low carb breakfast ideas that were easy meal prep items for my husband to take to work since he’s “on the go” and gets up early almost every morning for work. Having something he could grab and heat up quickly in the microwave (or toaster oven) with minimal effort, while still keeping it light in the carb department, was my main focus.

I did my research (meaning, combing through Pinterest and Instagram) and located a few recipes that I could throw into the regular rotation. These aren’t necessarily all my own personal recipes/ideas, but rather a collection of a few things I found that were both low carb and easy to meal prep for the week ahead!

Keto Egg Bites

I’m so thankful for Pinterest, which helped me discover these Keto Egg Bite recipes! They are so easy to meal prep ahead of time, and heat up well in the microwave quickly (heck, you could even eat them cold if that’s your thing). I have actually made two different versions of these Keto Eggs Bites – Ham & Cheese and Sausage & Cheese – and both are delicious. In fact, this recipe can be used as a base to change it up with several variations of breakfast meats (think bacon, breakfast sausage links, or even hot links!)

Ham & Cheese

Keeping it light in the carb department, these Ham & Cheese Keto Egg Bites are only 1.5 net carbs per bite, and incorporate coconut flour (finally, I found something to use that bag of coconut flour for!), cream cheese, eggs, ham, cheese, and baking powder. I used thinly sliced deli ham and sharp cheddar cheese from Trader Joe’s, and added about a cup of chopped green onion for some extra flavor and zing (also, I just love a little pop of green color!). Easy, delicious, and low carb. I find three bites is the perfect amount to fill you up for breakfast.

Sausage & Cheese

While the Ham & Cheese Bites are delicious, I preferred the breakfast sausage bites slightly more (I’m just a sausage girl at heart [insert sausage jokes here]). I ended up doubling the recipe to make enough for both my husband and myself to have for the week! The only thing I did not double was the sausage, and only used one pound (mostly because I didn’t have an extra roll of sausage to spare). One pound was plenty for a double batch so you might want to consider halving the sausage if making one batch of the recipe. Again, I also added a cup of green onion (which is not in the recipe). The sausage brand I used was Swaggerty’s Sage All Natural, which I picked up from Sprouts; the coconut flour was from Raley’s; and all other ingredients were from Trader Joe’s.


Keto Blueberry Bread

Wanting to break up the savory a bit so breakfast life doesn’t get too boring, I tried out this really good Keto Blueberry Bread from Low Carb Spark! This one is heavy on the almond flour, so make sure you have a lot on hand. You’ll also need a low carb sweetener – I used Lakanto Monkfruit Sweetener purchased from Amazon.

My Variations

It’s probably never a good idea to mess with a baking recipe since baking really is a precise science; however, I just can’t help myself sometimes! For this recipe, I probably doubled the amount of blueberries the recipe called for since it just didn’t look like enough. I also added zest from one lemon (though I don’t think the lemon zest was really noticeable).

Pro tip: melt a little pad of butter and heat up the slices before eating – they taste better that way, at least to me!


Breakfast Burritos

Last but not least, breakfast burritos! These breakfast burritos are my own creation and happen to be my husband’s favorite of the lot.

For my low carb breakfast burritos, I use:

  • 1 lb of Hot (Spicy) Breakfast Sausage
  • 10 eggs – scrambled with 1 cup green onion and seasonings
    • Seasonings for the eggs: I use a combo of Trader Joe’s onion salt, sea salt, Everything but the Bagel, and Everything but the Elote
  • Cheddar cheese (1 to 2 tbsp per burrito)
  • 10 low carb flour tortillas from La Tortilla Factory – Soft Taco Sized (you will need to get two 8-count packages – just use the extra for taco night!)

These ingredients make 10 little breakfast burritos! My husband eats two at a time, but if you’re a light eater, you can easily make the batch for two weeks and freeze what you’ll be using for next week.

I really enjoy the low carb tortillas from La Tortilla Factory and I don’t find that flavor or texture are compromised by being a low carb option. These soft taco sized tortillas have 70 calories, 6 grams of net carbs, 9 grams of fiber, and 5 grams of protein. Not bad! They are also really soft and easy to roll, so you don’t need to heat them up before stuffing them.
