Blue Apron Favorites June 2021

Hey fellow Blue Apron fans (or those interested in cooking with Blue Apron, if you’ve found yourself here)! My June 2021 Blue Apron Favorites roundup is pretty well rounded this month. You’ll find a wide variety of protein (chicken, fish, pork & beef are all represented here!) and there were some mighty tasty dishes to review.

If you’re new around here, here are a few notes:
  • My husband and I are on the three meal per week plan. This means we generally have about 12 to 15 meals to choose our top favorites from.
  • I’ll note any variations we make to our Blue Apron recipes at the end of each recap, if there are any. Sometimes, we change up the ingredients if we don’t like something (I’m looking at you mayonnaise) or if we feel the meals need a little somethin’ extra. We also tend to add other seasoning to dishes, especially when it comes to cooking proteins.
  • I write these posts so you can see what kind of delicious dishes you could cook with Blue Apron too! You can also read more about my Blue Apron favorites in my past post archives.

Here are my picks for Blue Apron Favorites for June 2021!

Chicken & BBQ Pan Sauce

BBQ chicken, mashed potatoes, and spicy collard greens – can you get any more Southern?! This dish actually had minimal ingredients, but was still packed with a lot of flavor.

I generally enjoy the Blue Apron dishes that have mashed potatoes as they usually include gold potatoes, which are nice and creamy. Perfect for mashing! Our chicken was cooked to perfection (thanks husband), and the BBQ sauce was tasty and savory.

I don’t eat collard greens often, and I’m not sure why. They are really easy to prepare! These were sautéed with a bit of pickled jalapeno for a spicy kick and were delicious!

Spanish Chicken & Romesco Rice

Next up, we have Spanish Chicken & Romesco Rice, with zucchini and garlic “mayo.” This tasty dish involved pan searing chicken breasts coated with a Spanish spice blend, and preparing a zesty romesco rice with sautéed zucchini.

In addition to adding the romesco sauce to the rice, we also had rehydrated currants. These added a slightly sweet element to the dish, which complimented the Spanish spice blend on the chicken and the romesco sauce.

Our Variations

We subbed sour cream in for mayo for the garlic “mayo” as we normally like to do!

Cod & Creamy Romesco

Another favorite of ours this month was this Pan-Seared Cod with Creamy Romesco Sauce. We had a double dose of Romesco this month! I always enjoy the cod dishes we cook with Blue Apron because they feel (and usually are) really light in calories. I walk away from dinner feeling much better about my meal choices!

Veggies in this dish consisted of snap peas (which provided a little bit of crunchy texture to the dish), along with grape tomatoes. The cod was served over pearled barley (a fun substitute for rice), and topped with a creamy romesco sauce (fromage blanc combined with romesco sauce). Light and delicious!

Truffle & Fontina Burgers

Our next favorite for the month was kind of a guilty pleasure – Truffle & Fontina Burgers! This was actually a special burger for the month for Father’s Day week. We opted to pay a little extra per serving to get this elevated burger experience.

*Personal gripe: Blue Apron has been up-charging their burger dishes and touting them as “craft burgers” lately, which I’m not too happy about! I suspect it’s due to the rising cost of beef. However, for us to pay $5 extra per serving for burgers is a little excessive. End rant.

Even though we had to shell out a bit extra for this meal, we were both so happy we opted for the upgrade! There were so many great flavors going on in this dish, from the truffle powder in the “mayo” to the sautéed onions and mushrooms. And let me tell you, Fontina cheese was perfect for this burger!

Our Variations

For the truffle mayo, we used sour cream and tossed the mayonnaise. Let me tell you, sour cream is so much better than mayo in every situation!

Pork Chops with Nectarine Salsa

Last on my list of favorites for June is this Seared Pork Chops with Nectarine Salsa dish, served with broccoli and pimento cheese mashed potatoes.

This dish really had so much goodness going on for me. For starters, I really enjoyed the pairing of the nectarine salsa with the pork chops. The simple salsa was made with fresh nectarines, green onion, and a little apple cider vinegar. I guess there’s just something about fruit and pork (like pork chops and applesauce?). Though, I’d take the nectarine salsa any day over applesauce…

Really though, the star of the show on this plate were the pimento cheese mashed potatoes, made with a Southern Spice Blend (which I really need to learn how to recreate), white cheddar cheese, and roasted red peppers. Pretty sure I need to make mashed potatoes like this every time from now on! They were so good!
